Cake:

  • 4oz. Butter
  • 1 1/2c. Sugar
  • 2 eggs
  • 1 Tablespoon Vanilla
  • 4c. Flour
  • 4 teaspoons Baking powder
  • 1 teaspoon Salt
  • 1c. Milk
  • 1 Apple diced
  • 1 1/2 Pint Blueberries
  • 4 Pints Raspberries

Cream butter with sugar until light and fluffy. Slowly add eggs one at a time, scraping sides down. Add vanilla, flour, baking powder and salt into bowl and begin to mix, while gradually adding milk until smooth. Gently fold in fruit until just together. Bake in a 325-degree oven for 30-40 minutes, or until lightly golden brown and springs back.

You can use either muffin tin or ramekins to bake in or even a cake pan; times will vary slightly depending on what you are using.
