Potato, Squash, and Goat Cheese Gratin

Potato, Squash, and Goat Cheese Gratin                Serves 6                      Time: 1 Hour

2 Medium Yellow Squash- ½ lb.

4 Small-Medium Red Potatoes- 1 lb.

3 Tablespoons Olive Oil

4 Oz. Goat Cheese

Salt and Pepper to taste

¼ Cup Whole Milk

1/3 Cup Parmesan Cheese

1 Tablespoon Basil or Thyme

 

Preheat oven to 400 degrees while slicing potato and squash very thin- 1/8 in. or less. Toss potatoes and squash in oil and lay 1/3 on bottom of baking dish, lightly season with salt and pepper. Take ½ of the goat cheese and crumble evenly over potato and squash, place next 1/3 of potatoes and squash over cheese, lightly season with salt and pepper. Add remaining goat cheese and finish with remaining potatoes and squash. Pour milk over entire dish and top with Parmesan cheese. Cook covered for 30 min. then uncover and cook additional 15 min. Serve warm.
