Herbed Corn and Tomato Salad Serves 6 Time: 10 min.
6 Ears Fresh Sweet Corn-Shucked
4 Medium Tomatoes
¼ Cup Mint Leaves
¼ Cup Mixed Herbs- Parsley, Basil, Rosemary, and/or Sage
1 Tablespoon Olive Oil
Salt and Pepper to taste
3oz. Goat Cheese
Loosely chop tomatoes and finely chop herbs, Boil enough water to cover corn by an inch, Cook shucked corn in boiling water for about 5 min. remove from water. Once corn has cooled cut kernels off ears and toss with tomatoes. Add herbs and oil then salt and pepper to taste and mix well. Top with goat cheese and serve.
