Herb Scented Roast Beets

Herb Scented Roast Beets               Time: 1 Hour 30 Min.                   Serves: 4

4 Medium Red Beets

1 Small Shallot

1 Handful Favorite Herb (Thyme, Rosemary, Sage, Etc.)

3 Tablespoons Vinegar (Apple Cider, Red/White Wine, White, Etc.)

Preheat oven to 400 degrees. Remove the tops and bottoms from beets but leave the skin on. Place beets in a roasting pan and add vinegar, diced shallot, and herbs. Cover dish with foil and cook until beets are tender. Remove from oven and remove foil, cool until you can handle the beets to remove the skins. Slice or chop serve as side.

Beets are a wonderful addition to many meals giving you wonderful color to your plate while providing beneficial nutrients, great flavor, and low-calorie boost to dinner. Beets also hold up extremely well if kept in a cool dry pantry.
